As promised I am back with an eggless recipe for you all. That too with the basic ingredients that anyone can find in the pantry.
These Eggless Walnut Banana Muffins are the best banana muffins you’ll ever make. They are crispy on outside, soft and fluffy on inside, and they turn out perfectly every single time!!! These are guaranteed to make your home smell amazing. And even more importantly, they taste great!
This is the best recipe to use the overripe bananas of your counter.
If time permitted, I could wake up every morning to the smell of fresh banana muffins baking in the oven.
If you dont want to add walnuts, substitute with choco chips. They also taste awesome.
Ingredients
- Soft Butter 1/2cup (100gm)
- Castor Sugar 3/4cup
- Refined Flour 1cup
- Ripe Bananas 2 no.
- Baking Powder 1/2tsp
- Baking Soda 1/2tsp
- Pinch of Salt
- Vanilla Essence 1/2tsp
- Walnuts and Nuts 1/2cup

Method:-
- Sieve refined flour, baking powder, baking soda and salt together in a mixing bowl.
- Mash bananas in a separate bowl.
- Beat butter and sugar till it light and fluffy.
- Add flour mixture, vanilla essence, mashed bananas and chopped walnuts. Mix it nicely.
- Grease the muffins tin and pour the mixture in tin. Or pour the mixture in small paper cases.
- Bake it in preheated oven at 180*c for 15-20 min till its brown on top.
